Recession Recipes: Bean & Cheese Enchaladas

BEAN AND CHEESE ENCHALADAS
4 flour tortillas
2 c. Refried Beans
2 c. Cheddar Cheese
1 can Enchalada Sauce
1/2 small onion
Louisiana Style Hot Sauce, to taste
Chili Powder, to taste
Mild Pepper Rings, to taste (optional)
Sour Cream (optional)
Mix together beans, 1/2 of cheese, onion, hot sauce and chili powder in a large bowl. Fill tortillas with bean mixture and roll. Place rolled tortillas in a 9x11 baking dish and pour enchalada sauce over them. Cover with remaining cheese, and mild pepper rings. Bake on 350 for appx. 20 minutes or until cheese is thoroughly melted. Serve with sour cream, makes 4 servings.
