Thursday Lunch Report: Eggs in a Basket!

Nothing complicated today - just two eggs, bread, and butter.

But it's the way that you combine these things that transforms them into lunch.

Today's lunch is Eggs in a Basket .

2 pieces of bread
2 eggs
Butter

If you have a griddle, it would be a good idea to break it out. If not, a nonstick pan will do fine, although you might have to make these one at a time, and by the time you got the second one done the first one is going to be cold or overdone.

Anyway, heat your griddle or nonstick pan. While that is heating up, make holes in the middle of your bread slices. You can use a biscuit cutter for this, but if, like me, you can't find one, you can use a small drinking glass - just mash the glass down into the bread and rotate it back and forth, to make an outline. Then, use your fingers to poke the bread hole out.

When your pan is hot, melt some butter into it and spread the butter around with a spatula. Put your bread slices (and their holes, or the bread that used to be where the holes are now, you know, the circular bits) into the butter and let all of that cook until it's nice and toasted.

Flip everything over, and crack an egg into each of the holes in the slices. Let this cook for a bit to allow the whites to set, and then cook until the yolks are done to your liking (I actually cooked them too long and ended up with firm yolks - not my happiest lunch). Add salt and pepper to taste.

When you do this right, you should be able to poke a hole into your yolk and let the whole thing get all messy and delicious on you.
